Pastry Chef Courtney Silva Brings Specialty Pastries to Southeastern Regional’s Colonial Room Restaurant
Cream cheese brownies, pumpkin cheesecake with pecan pie filling toping, Reese’s Pieces brownies, different flavored cake slices, monster cookies, cream cheese cookie squares, pecan pie squares, Portuguese sweet rice, fruit filled turnovers, puff pastry cinnamon twists, maple bacon cinnamon buns, chocolate bread pudding with crème anglaise sauce and an endless variety of muffins are some of the mouth watering treats Southeastern Regional’s Pastry Chef Courtney Silva teaches her students to keep them engaged and interested.
Ms. Silva attended Bristol Community College where she received her Associate’s Degree in Baking and Pastry Arts. She then furthered her education by going on to the New England Culinary Institute in Montpelier, Vermont for a Bachelor’s Degree in Hospitality and Restaurant Management with a minor in Wine Studies. She has run her own specialty cakes and desserts business for 6 years in her hometown of Fall River. She likes to travel to her client’s homes to make them feel more comfortable. Whether bringing tasty samples of wedding cake to a bride to be, or creating anything else a client may desire, Ms. Silva says she “works to make the customer feel as comfortable and satisfied as possible, and instill trust”.
Chef Silva began her teaching career at Southeastern’s Culinary Arts shop in September of this year and is enjoying her experience. “I love it. I love how everyone comes from different backgrounds and I love to get feedback on what they do at home and what they want to do in class. My main goal is to teach students just because they have a recipe does not mean they can’t change it to make it their own.” Her students receive multidisciplinary skills as they multiply or divide recipes and learn the chemistry and history of baking. “We do a lot of test recipes here like a test kitchen” she added.
Pastries and delicacies created by Chef Silva and her students may be enjoyed at Southeastern's Colonial Room, a student-run restaurant open to the general public throughout the school-year.
