Sprouting Workshop 12:00with Renée From Raw for Longer 

See Renée from Raw for Longer for her Sprouting Workshop this week at noontime at the raw nut table.  The Workshop includes a FREE Spouting  jar, mesh strainer top and starter seeds (while supplies last - one per customer).  Additional jars and seeds will be available for sale.

Cotton 2 Wool is a small business, located in Whitman, MA, and is owned and operated by Eileen Miller and Susan Stokinger.

The fall is a time when we feature our mittens, bags, scarves, pot holders and cat toys. These products are artfully crafted from recycled wool sweaters that have been carefully washed, dried and felted into soft wool. 

 

Our warm and colorful mittens are crafted and pieced from multiple sweaters and are lined with polar fleece. With our passion for recycling, we are committed to using all of the sweaters incorporating small wool pieces and buttons as embellishments and in pot holders, cat toys, and scarves -- whatever we dream up as we are sewing. It is our hope that our love of art, sewing and recycling is reflected in our products. 

We are excited to join the Simpson Spring Farmers Market. Please stop by as we love meeting new people and talking about our shared interests. 



Vendor Specials


A Summer Place Farm is psyched to have apples, tomatoes, small pumpkins, several squash varieties and dried cranberries. Preserve the Taste of Summer: Fresh Tomato Sauce
A Farm Fresh sauce to use with you GF Pasta from Pastaman

 

INGREDIENTS
  1. 10 pounds tomatoes, coarsely chopped
  2. 1 1/2 cups water
  3. 1/2 cup extra-virgin olive oil
  4. 6 large garlic cloves, very thinly sliced
  5. 3/4 teaspoon crushed red pepper
  6. 3 large basil sprigs
  7. 1 tablespoon sugar
  8. Salt and freshly ground pepper

 

INSTRUCTIONS
  1. In a large pot, combine the tomatoes with the water, cover and cook over moderate heat until the tomatoes are softened and soupy, about 15 minutes. Set a food mill over a very large bowl. Add the tomatoes and puree them into the bowl. You should have about 18 cups.
  2. Wipe out the pot and heat the olive oil in it. Add the garlic and crushed red pepper and cook over very low heat until softened, about 1 minute. Add the tomato puree, basil and sugar and season with salt and pepper. Simmer over low heat until the sauce is thickened and reduced to 12 cups, about 2 hours. Discard the basil. Let the sauce cool, then pour into six 1-pint plastic containers and freeze for up to 4 months.

Fettuccine all'Amatriciana (Fettuccini in a Spicy Tomato Sauce)  

INGREDIENTS
3 tbsp. extra-virgin olive oil
4 oz. thinly sliced pancetta or bacon, cut    into 3/4" pieces
Freshly cracked black pepper, to taste
2 cloves garlic, minced1 small carrot, minced
1/2 medium onion, minced1/2 tsp. crushed red chile flakes
1  28-oz. can peeled tomatoes,    preferably San Marzano, undrained and puréed
Kosher salt, to taste
1 lb. fettuccine  or spaghetti
1 1/4 cups grated Pecorino Romano or Parmesan cheese 

 

DIRECTIONS
Heat oil in a large, high-sided skillet over medium heat. Add pancetta or bacon.  Cook, stirring, until lightly browned, 6-8 minutes. Add pepper; cook until fragrant, about 2 minutes more. Increase heat to medium-high; add garlic, carrots, and onions and cook, stirring occasionally, until soft, about 6 minutes. Add chile flakes; cook for 1 minute. Stir in tomatoes, reduce heat to medium-low, and simmer, stirring occasionally, until sauce thickens and flavors meld, 20-25 minutes. Season with salt; keep warm. 2. Bring a 6-qt. pot of salted water to a boil. Add pasta and cook until just al dente, 6-8 minutes. Reserve 1/2 cup pasta water; drain pasta. Heat reserved sauce over medium heat. Add pasta and reserved water; cook, tossing, until sauce clings to pasta, 2-3 minutes. Add 1/2 cup Pecorino or Parmesan ; toss. Divide between serving bowls; serve with remaining Pecorino or Parmesan.

Pasta & Chicken in a Garlic Tomato Sauce  
INGREDIENTS
4 chicken thighs
2 tablespoons flour 
1 tablespoon olive oil 
1 tablespoon butter 
1/2 onion, sliced 
1 red pepper, sliced 
1 green pepper, sliced 
1/2 dozen mushrooms, sliced 
1 teaspoon dried oregano 
3 cloves garlic, finely chopped 
2/3 cup white wine 
1 large can tomatoes
Pasta from the Marketplace!

 

DIRECTIONS

Heat a large saucepan or medium dutch oven to medium high heat. Remove the skin and bones from the thighs and cut into large chunks. Sprinkle with salt and pepper and dust with flour. Put the butter and the olive oil in the pan and when it stops foaming add the chicken. Brown on all sides and remove to on a plate. Add the onion and the peppers, and sauté until it starts to soften. Add the mushrooms, the oregano and the garlic and stir until softened. Stir in the white wine and simmer until reduced by half. Slowly add in the whole tomatoes squishing each one with your hands as you go to break them up. Bring the mixture back to a simmer and add the chicken. Season with a big pinch of salt and pepper, cover and reduce heat to low. Cook for 45 minutes. Remove lid, season to taste. Reduce heat to low. 5. Cook pasta according to package directions. Drain and toss with sauce. Sprinkle with some italian parsley and serve.

Savor the Flavor of Fall: Pumpkin Puree

INGREDIENTS

A Pumpkin (or a winter squash or sweet potatoes etc. Whatever you like...)


DIRECTIONS:   

Preheat your oven to 400 degrees. 

 

Lightly oil a baking sheet. 

 

Halve a sugar pumpkin or other winter squash and scoop out the seeds. Place the pumpkin halves cut side down your baking sheet and roast the pumpkin until it is completely tender inside, about 45 to 50 minutes.

Scrape the pumpkin flesh off the skin with a large spoon (metal is great here, because of the sharper edges) and puree in a blender or food processor until smooth. Let cool and use as needed.

Here's a savory side dish from Simpson Spring
Root Beer Baked Beans

INGREDIENTS
  • 4 slices applewood-smoked bacon, cut crosswise into 1-inch pieces
  • 3 1/2 cups chopped onions
  • 2 garlic cloves, minced
  • 4 15-ounce cans cannellini (white kidney beans), rinsed, drained
  • 1 1/2 cups Simpson Spring Root Beer
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons mild-flavored (light) molasses
  • 2 tablespoons tomato paste
  • 2 tablespoons Dijon mustard
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon freshly ground black pepper

  

DIRECTIONS 
Preheat oven to 400°F. Cook bacon in large ovenproof pot over medium heat until crisp, stirring occasionally. Using slotted spoon, transfer bacon to paper towels.  Add onions to drippings in pot; cook until beginning to brown, stirring often, about 8 minutes.  Add garlic; stir 1 minute. Add beans, root beer, vinegar, molasses, tomato paste, mustard, chili powder, 1 teaspoon salt, and 1 teaspoon pepper; mix. Stir in bacon; bring to boil.  Transfer to oven; bake uncovered until liquid thickens, about 30 minutes.

Brussels Sprout Scramble
serves 2 

INGREDIENTS

2 cups Brussels sprouts, 3 eggs, 1 tablespoon olive oil, 1/4 teaspoon red pepper flakes, Salt and pepper to taste, plus, your favorite shredded cheese and bread.

 

DIRECTIONS

Preheat the oven to 400 degrees.Trim the hard stem end of each sprout and rinse them clean. In a small bowl, toss the sprouts with olive oil, red pepper flakes, and salt and pepper.Place the Brussels sprouts in an oiled baking dish and roast for about 15 minutes, or until browned. Turn off the oven. Remove the dish from the oven and crack the eggs over the top of the roasted sprouts. Place back in the still-warm oven. Let sit for 2-3 minutes, or until eggs are cooked. Top with your favorite shredded cheese, and enjoy. Goes great with some Marketplace fresh bread!

Renée's Corner: The Benefits of Apple Cider Vinegar 

Have you discovered the amazing healing properties of apple cider vinegar? For ailments and health issue such as high cholesterol, stomach aches, high blood pressure, arthritis, constipation, arthritis, high cholesterol, bad breath, sinus congestion, migraines.... Apple Cider Vinegar could be your new best friend! ACV has also been known to aid in weight loss.

 

WHAT KIND TO USE: Organic, raw, unfiltered/undistilled ACV which contains the "Mother". The Mother is a brownish, cobweb-like substance/sediment and is a by-product of the way ACV is made. You'll find it at any good health food or grocery store and a large bottle will cost you $3.00 - $4.00 tops.

 

HOW IT WORKS: Studies have shown a 5% solution of vinegar kills 99% of bacteria, 82% of common mold and 89% of germs and viruses. Vinegar is also full of enzymes and life-giving minerals including potassium and phosphorus.

 

HOW TO USE: For overall good health and as a preventative measure, drink 1 or 2 ACV cocktails daily. Add 1 or 2 teaspoons of ACV to a 16 oz. glass of water (preferable distilled orSimpson Spring water) and sip on it. For variety try adding a tsp. of honey and a dash of clove, or add 1 tsp. of baking soda, which is particularly good for indigestion relief. You could also try adding ACV to freshly-squeezed vegetable juice.
Apple Cider Vinegar Remedies:
  • Acne: Take 2 tsp of ACV mixed in warm water 3x daily, and apply topically each night with cotton swab.
  • Athlete's Foot: soak your feet daily for 20 minutes in 50% ACV and 50% water. If you don't see results in one week, go 100% ACV and soak for 20 minutes. If feet get too dried out, rub lightly with coconut oil.
  • Acid Reflex Recipe: In ½ glass of water add 1-2 TBSP of ACV. Drink 3x a day. Do it for 5 days, then stop for 2 days. Optional: add ½ to 1 TBSP of baking soda-add slowly as there will be a rush of bubbles.
